What the boss needs:
INGREDIANTS
1 Cup Almond Flour
1 Tablespoon Ground Flaxseed
3 Tablespoon Water
OPTIONAL SEASONINGS
1 Teaspoon each salt, pepper, Sweet paprika, lemon pepper, garlic powder, mustard powder, onion powder, dried herbs
1 Tablespoon sunflower seeds
1 Tablespoon pine nuts/walnuts chopped
1 Tablespoon cranraisins
1/4 Cup parmesan or other hard cheese
How to make it like a boss:

-
Preheat oven to 350°
-
In a medium sized bowl add water to the flaxseed and let it sit for 2 min. It will get a little thicker and become more of the consistency of an egg as it's an egg replacement. You can also substitute 1 egg for the ground flaxseed if you like!
-
Add the almond flower to the flaxseed mixture and stir it up with a spatula or your hands, until it becomes dough. The dough should hold together when you make it into a dough, but it shouldn't be super wet. It should be a bit of a gummy consistency. If it isn't holding together add a little more water, if it's too wet add a little more almond flower. You got this girl!
-
Now is the fun part because you are the boss and you can add any ingredients you want to the dough. I like to divide the dough into two balls so I can make 2 different flavors of crackers. I love adding fresh herbs like dill, oregano, or basil finely chopped with sunflower seeds. Also, dried cranraisins and pin nuts are really nice! And for the non-vegans, use Parmesan!
-
This part is VERY IMPORTANT if you're gonna do it like a boss, Parchment Paper! Parchment paper is magical and will make your life so much easier and make clean up time much faster. After you've made the dough into a ball place it on a 2 foot long piece of parchment paper and flatten it out a bit with your hand. Next, place another 2 foot long piece of parchment over the top of your dough ball.
-
Next use your rolling pin (if you don't have a rolling pin you can use a bottle of wine or olive oil bottle!) to roll out the dough to your desired thickness. If you put some muscle behind it and get them thin, they will be really crunchy! Around 1/8 inch or less in thickness. The dough will not be in a perfect shape and it doesn't matter-you're the boss so it can look however you want.
-
Once the dough is rolled out nice and thin, take off the top layer of magical parchment paper and sprinkle with whatever seasonings you want.
-
Now take a knife or pizza cutter and cut the dough into bite sized squares around a 1/2 inch on all sides.
-
Carefully move the parchment paper onto your baking sheet. If it's too big then take scissors and cut the paper in half and back in 2 batches.
-
Cook for 10-12 min or until golden brown.
-
*Note: the crackers on the outer edges will cook faster and remove the crackers on the edge at around 8 min allowing the ones in the middle to continue to cook until golden brown.
-
Put the crackers on a cooling rack or in a bowl (take off the baking sheet or they will keep cooking) to cool. You can keep the crackers in a ziplock or Tupperware to eat later, but trust me they won't last long and you'll make a double batch next time. Eat with hummus, cheese, or just on their own!
